28 August 2011 The Ultimate Tomato Sandwich

Before summer is over, let’s linger for a moment over one of the great, iconic tastes of the season: the tomato sandwich. For more than a century, this sandwich has been a seasonal standard and, while we Southerners love to claim it as our own, its popularity really knows no regional – or, indeed, continental – boundaries.

Whether they take the form of the South’s homey supper-over-the sink version, made with thick slabs of freshly gathered tomato on soft loaf bread slathered with homemade mayonnaise, the crust-trimmed elegance of Britain’s neat little tea sandwiches made with thin-sliced bread, carefully salted and pressed fruit, and butter, or the classic crisply toasted American diner standard, the BLT, tomato sandwiches are universally loved.

The sandwiches of my own childhood were the supper-over-the-sink kind. Made with juicy, thickly-sliced tomatoes from Mama’s garden, lots of mayonnaise, and the kind of mushy loaf bread that tended to disintegrate in your hands, the juice ran down one’s arms and squirted all over one’s chest. Eating them was, like sex, something one did in private.

It was here in Savannah, where tomato sandwiches have been the expected refreshment for any summer and autumn afternoon party or reception worth going to, that I first encountered the more refined English teatime form, the sort that (mostly) doesn’t squirt tomato juice and is easy to eat in one or at most two mouthfuls.

Among Savannah’s legendary caterers over the last century, arriving at The Ultimate Tomato Sandwich became almost like the pursuit of the Holy Grail. “Secret” ingredients ranged from two kinds of bread (one on each side), to onion mayonnaise, herb mayonnaise, and one of several brands of seasoned salt. They’ve all made their mark, but for me, the ultimate tomato sandwich was achieved by Shirley Cannon, former housekeeper for the Green-Meldrim House.

The historic Madison Square mansion is the parish hall for St. John’s Church, and the venue for an after-church coffee hour that’s like stepping back in time at least three-quarters of a century. The coffee and tea are dispensed from Victorian silver urns into china cups, and the lace-and-linen-draped tables are heavy with homemade baked goods and tea sandwiches.

Some of the food actually does change with the tide of fashion, but the centerpiece has not: it’s still Shirley’s tomato sandwiches, made by her incomparable recipe even though she has long since retired. Her secret ingredients were McCormick’s brand seasoning salt and crumbled bacon. Face it: nobody is going to top that any time soon.

To make sixty half-moon sandwiches, you’ll need about 5 to 6 medium ripe tomatoes, some kosher salt, sixty thin slices of firm home-style white bread, about a cup of homemade mayonnaise, 8 slices of crisp-cooked and crumbled bacon, McCormick’s Seasoning Salt (no substitutes), and chopped fresh or dried dill.

First wash and core enough tomatoes to make thirty quarter-inch-thick slices. Slice and spread them on a platter or rimmed baking sheet (Shirley never peeled them), sprinkle lightly with kosher salt, and let them stand at least a quarter of an hour.

Meanwhile, cut the bread into rounds with a large round biscuit cutter. Mix the mayonnaise and bacon, and season to taste with the Seasoning Salt. Lightly spread one side of the bread rounds with bacon mayonnaise. Drain the tomatoes and pat them dry, then lay one slice each over the spread side of half the bread rounds, top with the remaining bread, spread-side-down, and cut them in half. You can make them as much as half an hour ahead. Cover them with a damp tea towel.

Just before serving, line twelve-inch round trays with lace doilies. Arrange the sandwiches on them in concentric circles, standing up on their flat cut sides. Sprinkle their edges with dill, and serve immediately. Read More

One of the great inventions of the modern world has to be the machine that shells summer’s bounty of beans and peas—as anyone who has ever been subjected to the job as a child will readily tell you. There are few things in this life better than fresh butterbeans from the summer garden, and even fewer that are more tedious than shelling them.

Southern cooks of the past would no doubt turn their noses up at the neat bags of butterbeans that came home with me from the farmers’ market this morning. They’d argue, and rightly, that beans that had been lying bare-naked on ice could not be nearly as good as ones that were kept snugly in their pods until just before they’re cooked.

But those old girls had help in the kitchen—or at the very least, a child they could indenture for the job—and I don’t. The small sacrifice in flavor is well worth the wear and tear it saves on my fingers, not to mention patience.

Besides, the morning was hot and making me a little homesick, and those plump little butterbeans brought back soothing memories not only of home, but of my dear old friend Clara Eschmann, the endearing lady who was for many years food editor of the Macon Telegraph.

A fantastic cook and natural-born storyteller, Clara loved butterbeans almost more than she loved bourbon (which is saying a lot). She steadfastly maintained that no self-respecting Southerner would ever call them lima beans, and relished spinning the tale that their Southern name derived from the fact that they had to be cooked with butter—and plenty of it.

She was in good company. Witness Mrs. Hill’s directive on the subject, put down a good half-century before Clara was born:

360. Lima, or Butter Beans.—When fully formed, and before the hull turns yellow, shell them; wash them well, and put them to boil in hot water, sufficiently salted to season them. When tender, pour off nearly all the water; make the remainder of the broth rich with butter, and serve upon a hot dish. Never pepper them unless with white pepper; the small black particles of the common pepper upon so much white vegetable gives them an untidy appearance.

Mrs. Hill’s reputation as a cook could rest on that recipe alone. Say what you will about what salt-cured pork and pepper bring to other kinds of beans, these delicacies need absolutely nothing but salt, butter, and two hands that don’t mind one another—a stingy one with the salt and a generous one with the butter. Anything else just gets in the way.

To serve 4 people, you’ll need about a pound (shelled weight) of small fresh butterbeans—which works out to about 3 generous cups. You’ll also need a little kosher or sea salt and about 2 ounces (4 tablespoons) of best quality butter. Put the shelled beans in a colander, rinse them well under cold running water, and let them drain.

Bring a quart of water to a boil over medium heat, season it lightly with salt, and add the beans. Bring it back to a boil, skimming off the foam that forms, and reduce the heat. Simmer gently until the beans are tender, which could take anywhere from 15 to 25 minutes, depending on their size and maturity. Drain off most of the liquid and stir in the butter a few lumps at a time, until the liquid is lightly thickened and creamy. Taste and adjust the seasonings, adding more butter if they’re not creamy enough. Heat a serving bowl by rinsing it with hot water, turn the beans into it, and serve immediately.

You might think that such a recipe could barely be called cooking, but sometimes the mark of a real cook is knowing when to leave well enough alone. Read More

Long before it was discovered by ambitious chefs and made the poster appetizer for the Nouvelle Southern Cooking movement of the 1980s, shrimp with grits was hearty, humble breakfast and supper fare in the Carolina and Georgia Lowcountry that no one would have thought of as fancy, let alone an appetizer.

To begin with, it would not have occurred to anyone to have grits at dinner, particularly not at a formal table. In the second place, in those days the idea of something as substantial and satisfying as shrimp swimming in rich gravy as merely an appetizer would have seemed truly strange.

Once it got into the hands of creative chefs, however, there was no turning back until it had been so gussied up and overdone that it was hackneyed and passé. It then came full circle and was rediscovered as fashionably “retro”—whatever that is supposed to mean.

That’s not meant to be a cranky slam of what professional cooks do when they spin on a classic. It’s just that, in all their spinning, everyone lost sight of the original dish and its humble origins.

A lot of us stopped thinking of shrimp and grits as a perfectly sensible breakfast and supper dish and started thinking of it as too fancy for regular meals. We either quit making it altogether or saved it for company—something our grandmothers would rather have died than do.

This past Monday evening, I’d picked up some lovely local brown shrimp for supper. Since there were just two of us, it needed to be something simple, and I stood there with the refrigerator door open, getting nowhere, until the bag of grits on the bottom shelf caught my eye.

How could I have forgotten about shrimp and grits? The perfect supper on a hot summer evening had been there all the time, just waiting to be noticed.

For two persons (and this doubles nicely), you’ll need

¾ pound of medium shrimp
2 strips of extra-thick-cut bacon cut into ½-inch dice
1 small or half a medium yellow onion, trimmed, split, peeled and cut into ½-inch dice
1 large clove garlic, lightly crushed, peeled, and minced
2 tablespoons all-purpose flour
Salt and ground cayenne pepper
4 cups hot Cooked Hominy Grits (recipe follows)

1. Peel the shrimp, reserving the shells. Cover, and refrigerate the shrimp. Put the shells and 4 cups of water in a stainless or enameled pot. Bring it to a boil over medium-high heat, being careful not to let it boil over. Reduce the heat to a simmer and cook until the liquid is reduced to 1 cup. Turn off the heat, strain the broth into a stainless steel or glass bowl. Discard the shells. If not proceeding right away, cool completely, cover, and refrigerate. (If you’re in a hurry, you can omit this step and just use water for the gravy, but this does make it tastier.)

2. When you are ready to continue, put the bacon in a large sauté pan or skillet that will hold the shrimp in one layer. Sauté over medium heat, tossing occasionally, until browned. Add the onion. Raise the heat to medium-high and sauté, tossing frequently, until it’s pale gold, about 4 or 5 minutes. Add the garlic and sauté until fragrant but not colored. Sprinkle in the flour and cook, stirring constantly, until it is lightly browned, about 2 minutes more.

3. Slowly stir in the shrimp broth (or 1 cup of water) and bring it to a boil, stirring constantly. Simmer, stirring occasionally, until thickened, about 5 minutes. Add the shrimp and season lightly with salt and cayenne. Cook until the shrimp are curled and pink, about 2 minutes. Taste and adjust the seasonings and serve at once over hot grits.

Cooked Hominy Grits
Serves 2

½ cup hominy grits (often labeled “regular” grits . . . whatever that means)
Salt

1. Bring 2 cups water to a boil in an enameled or stainless steel saucepan over medium heat. Prepare a teakettle of water, bring it to a boil, and keep it simmering.

2. Slowly add the grits to the saucepan in a steady stream, stirring constantly. Bring it to a boil, still stirring, and reduce the heat to a steady simmer. Loosely cover the pan and cook, stirring often, until the grits are very thick and tender, about an hour. If the grits get too thick before they’re tender, add a little of the simmering water from the kettle.

3. Season to taste with salt and simmer 5 minutes longer. Read More

There’s never a time that I don’t miss my grandmother, but summer is probably when I miss her most. That was when, for two wonder-filled weeks, we each got to stay with her all by ourselves. The best part for me was the time spent with MaMa in the kitchen, making homemade vegetable soup and pimiento cheese, frying chicken, doughnuts and turnovers, and baking—even in the dead heat of summer with no air conditioning.

Of all the things we cooked together, nothing recalls those days more poignantly or delectably than one of MaMa’s great specialties: young swan-necked yellow squash, steamed, scooped out and filled with its own pulp mixed with stale crumbs and seasoned simply with sliced green onions, salt, and pepper.

 

Ever since the first time I crumbled the bread for them fifty years ago, MaMa’s squash have been a regular part of my summer tablealthough, through those years, I’ve strayed from the simple elegance of her formula, adding at various times bacon, prosciutto, seafood, sausage, sage, thyme, Parmigiano, Cheddar, and garlic. But when it comes down to it, if the squash are good to begin with, all that just gilded the lily and got in the way.

To achieve perfection as my grandmother did, choose four medium-sized yellow crookneck squash that are impeccably fresh. They should have clear, glossy-smooth skins and stems that are plump and bright green. Wash them carefully under cold running water and steam them whole in a steamer basket set over at an inch of simmering water until barely tender, about 12-15 minutes, depending on size. Rinse them under cold water to stop the cooking and let them cool enough to handle.

Position rack in center of the oven and preheat it to 350° F. Generously butter a nine-by-twelve-inch baking dish. Lay the squash on a cutting board with their crooknecks to one side so that they lie flat. Slice off about a quarter of their tops, chop it coarsely, and put it in a ceramic or glass bowl. With a melon baller or teaspoon, carefully scoop the pulp and seeds from the squashes, leaving their outer walls intact. Gently squeeze the excess moisture out of the pulp, chop it, and add it to the bowl. Invert the squash shells over a rack and let them drain for a few minutes.

Meanwhile, trim, wash, and thinly sliced enough green onion to make half a cup. Add them to the squash pulp along with a generous cup or so of finely crumbled stale but still soft biscuits, dinner rolls, or loaf bread. Season to taste with salt and a fresh grinding of pepper. Lightly beat an egg until it’s well mixed and just moisten the filling with it; you may not need all of it. Mix well and spoon it evenly into the shells, mounding the excess up on the top. Sprinkle the tops generously with more crumbs, gently pat them in, and put the squash in the prepared dish. Cut thin slices of butter over the tops and bake until hot through and golden brown, about half an hour.

Let the most intense flush of heat dissipate for a few minutes, then sit down with a glass of sweet tea and taste the pure essence of summer on a fork.

One of the things I miss the most about living away from my family is my mother’s garden, especially at this time of year, when almost everything is coming in at once. There are tomatoes gathered only after they’re ripened to perfection, and green beans, squash, and okra, all of which are best when picked while young and a little immature.

There are compensations to living here in Savannah, of course: here it’s peak shrimp season, and thankfully there’s now a growing local farmer’s market whose vendors share my mother’s care with produce. This past weekend, one of my favorite farmers had okra no bigger than my thumb, gathered just the evening before. It was so beautiful and perfect that it was hard not to buy more than we could eat over the weekend.

There’s nothing else to do with okra like that but let it shine on its own, something that’s rarely allowed to happen. It’s a pity, really, because young, tender okra possesses a wonderful, refreshing flavor that is easy on digestion (and souls) wearied by summer’s dead heat. It’s a quality Mary Randolph clearly understood when she gave us:

Gumbs—A West India Dish.

Gather young pods of ocra, wash them clean, and put them in a pan with a little water, salt and pepper, stew them till tender, and serve them with melted butter. They are very nutricious and easy of digestion.

Mrs. Randolph’s melted butter was prepared in a pan continuously shaken over a larger basin of simmering water. Barely melted to the consistency of a beurre blanc, it was used to finish just about every vegetable that went to her table.

Cooking is never static, even for historians. Whenever we take a recipe into our own kitchen, we adapt it to suit our tastes and cooking habits. While working on her definitive commentary on Mrs. Randolph’s work, my mentor Karen Hess did just that with this lovely recipe. Since she and her husband, John, once lived in Egypt, there’s a distinct hint of the Middle East in her version with its garlic and splash of fruity olive oil. Sometimes she made it with butter, but she once told me “we like it best served the next day, at room temperature, and for that, of course, olive oil is best.” Indeed.

Karen’s Okra

Whenever she offered it cold, there were always thick wedges of lemon on hand.

Serves 4

1½ pounds very fresh okra pods no more than 2 inches long
1-2 large cloves garlic, lightly crushed and peeled
Extra-virgin olive oil
Salt and whole black pepper in a mill
Lemon wedges (optional)

1. Wash the okra under cold running water, gently rubbing to remove fuzz. Trim the cap or stem end but leave the pods whole.

2. Put the okra in a heavy, lidded skillet that will hold it in one layer. Add a splash (about a quarter of a cup) of water, the garlic, a drizzle of olive oil, a liberal pinch of salt and a few grindings of pepper. Cover and put it over medium-high heat for about 4 minutes, until the okra are tender but still bright green, shaking the pan occasionally to help the okra cook evenly. Don’t let the liquid evaporate completely; add a spoonful or so as needed to keep the moisture from drying completely.

3. Pour the okra and any “sauce” that remains into a shallow serving bowl, remove and discard the garlic, drizzle it with fresh oil, toss to coat with sauce, and serve warm or at room temperature, passing lemon separately, if liked.

When we’re having it cold, I deviate very little from Karen, but when it will be eaten straight from the pan, my own version is equally eclectic, influenced not only by Karen, but also my mother and another mentor, Marcella Hazan.

To serve four, you’ll need all the ingredients for Karen’s Okra, using only one clove of garlic and substituting for the oil the best butter that can be had. Again, wash the pods under cold running water, gently rubbing to remove the fuzz, and trim the cap or stem end, leaving them whole. Crush, peel, and mince the garlic fine.

Put the okra in a heavy, lidded skillet that will hold it in one layer. Add about a quarter of a cup of water, the garlic, a liberal pinch of salt and a few grindings of pepper, and a generous lump of butter. Cook it following Karen’s method, shaking the pan occasionally and adding a spoonful or so of water as needed. Off the heat, add another pat or so of butter and shake the pan until the okra is coated. Serve warm.

* No one is really sure, by the way, how okra, the seedpod of an African hibiscus, migrated from Africa to our continent, but it turns up in the Americas wherever there are Africans in the kitchen, from Virginia to the West Indies all the way to Brazil. And Mrs. Randolph’s name for her recipe, while by no means definitive documentation, is suggestive of the route it may have taken into our hemisphere. Read More

One of the key foundations on which so much of Southern cooking is built is the rather magical pairing of okra with tomatoes. From Maryland to Florida, Virginia to Texas, whether it's simply the two vegetables simmered together, a thick gumbo, or a complex pot of vegetable soup in which they're joined by everything else in the garden, the combination is practically universal.

 

Small wonder: this union is one of those perfect marriages of flavor and texture, so perfect in fact that we tend to forget it was unheard of as little as five centuries ago. Tomatoes are of course native to Central America and okra is African; for thousands of years they were quite literally a world apart from one another.

12 July 2011: Spanish Tomatoes

The deadly heat of a Savannah summer is not for the faint of heart. The air gets so warm and thick with humidity that it’s actually sticky, which is how the summers here came to be nicknamed “Hot Mayonnaise Season.” This year, the hot mayonnaise air settled in early, taking me back to my first July in Savannah more than thirty years ago.

The heat that summer, like this one, was record setting and brutal. Anyone with the means to do so fled for Tybee (our local beach) or a mountain cabin. The rest of us braved it out as best we could and tried to pretend it didn’t matter.

We all had ways of dealing with that heat, but fans, loose cotton clothes, and extra ice in one’s bourbon can only do so much. To get through with grace involves a certain amount of psychology, and at that, my late friend and neighbor Marilyn Whelpley was an expert.

In those days, there were no VCRs. One actually had to plan around a fixed network schedule. When Marilyn learned that a local station was airing the winter holiday classic White Christmas in the middle of July, she asked me over to make an evening of it.

Despite the heat, she’d been putting up tomatoes that day (ripe tomatoes, like corn, wait for no one), and held back a few to make a pan-full of Spanish Tomatoes—simply peeled, cut into wedges, and simmered with a few slices of onion and sweet bell pepper. Served over rice with a bit of sautéed local smoked sausage on the side, its bright, fresh flavors renewed our heat blunted appetites as we watched that classic film about waiting for snow and pretended that cooler weather just around the corner.

Neither of us knew at the time that Spanish Tomatoes had deep roots in Savannah’s culinary past. It goes back at least to the late 1860s, when Mrs. Fred (Leila) Habersham, one of Georgia’s first known cooking teachers, taught it in the cooking school she ran in her mother’s home on the corner of Abercorn and State Street.

Mrs. Habersham sautéed each ingredient separately, layered them in a dish, and baked them until they were richly concentrated and flavorful. One student aptly noted in her notebook that they were “delightful to eat just so, or served for sauce, or as an entrée.”

Marilyn’s preparation was more streamlined, and while its flavors were not as concentrated, they were fresher and more direct, just right for a White Christmas supper on a searing July evening.

Despite the heat of that summer, I fell in love with this place and came back to live. Part of it was probably a passion for historic architecture, another part, the unique warmth of these people who have become a part of my life. Perhaps it had a little something to do a timeless seafood-rich cuisine that has become an indelible part of my own kitchen.

But maybe—just maybe, it owed more than Marilyn ever knew to the comfort of White Christmas and a plateful of Spanish Tomatoes.

Serves 4 to 6

2 pounds fresh ripe tomatoes
2 tablespoonfuls drippings or unsalted butter or olive oil
2 medium green bell peppers, stem, core, seeds, and membranes removed, thinly sliced
1 large Bermuda or yellow onion, trimmed, split lengthwise, peeled and thinly sliced
Sugar
Salt and ground cayenne pepper

1. Blanch, peel, and core the tomatoes. Over a sieve set in a bowl to catch their juices, cut them into thick wedges and scoop out the seeds. Add them to the bowl with their juices.

2. Warm the drippings, butter, or oil in a large frying pan over medium heat. Add the peppers and onions and sauté, tossing, until the onion is translucent and softened and the pepper wilted but still bright green, about 4 minutes. Add the tomatoes and their collected juices and raise the heat to medium high. Season well with salt, a pinch of sugar (if needed), and cayenne to taste. Bring to a boil.

3. Reduce the heat once again to medium, and simmer briskly until the juices are thick and the tomatoes are tender but not falling apart, about 20 minutes. Taste and adjust the seasonings, let it simmer half a minute longer, and turn off the heat. Serve warm.

To bake them as Mrs. Habersham did, position a rack in the center of the oven and preheat it to 350° F. If the skillet isn’t ovenproof, at the end of step 2, transfer its contents to a lightly buttered wide 3-quart baking dish. Otherwise, just put the uncovered skillet into the oven. Bake until the juices are thick and the tomatoes tender, about 1 hour. Read More

Blueberry Crumble

Among my favorite and most cherished memories from childhood are those big, leisurely Sunday dinners that we had after church, when we actually ate in the dining room and used the good china and silver.

There were never fewer than three side dishes and always a dessert (most often banana pudding)--which marked it as a special occasion at my mother's table, since a sweet at the meal's end was not a given in our household.

Now that I am the one who gets up early on the the "Day of Rest" and does the cooking, I appreciate more the effort that my mother put into making it seem leisurely. However, it remains among my favorite meals, both to make and to eat.

Whether it's the traditional Southern roast and plethora of sides from my childhood or a simple frittata with hash browns, the challenge, for me, is that obligatory dessert at the end. Sweets are just not my thing.

Happily, blueberries are in season and over this past holiday weekend, there happened to be a couple of pints on hand. Sunday's dessert was a snap to make, because nothing is simpler, or better, than a blueberry crumble, and this one may well have been the best I've ever made.

Blueberry Crumble

Serves 6 to 8
3 pints blueberries
¾ cup sugar
Salt
1 tablespoon cornstarch
1 teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
1 lemon
7 ounces (about 1½ cups) all-purpose flour
2/3 cup firmly packed light brown sugar
4 ounces (8 tablespoons or 1 stick) unsalted butter

1. Position a rack in the center of the oven and preheat it to 375° F. Wash, drain, and pick over the berries to remove any stems and blemished fruit. Put it in a glass or stainless steel mixing bowl and add the sugar, cornstarch, cinnamon, and nutmeg. Grate in the zest from the lemon. Toss well, taste a berry, and if they are not very tart, halve the lemon and add a squeeze of lemon juice, as needed.

2. Lightly butter a shallow 2 quart casserole and pour in the fruit. Wash and dry the mixing bowl, put in the flour and brown sugar, and toss until well mixed. Add the butter and cut it in until the mixture resembles course meal, with lumps no bigger than very small peas. Sprinkle it over the fruit.

3. Bake until golden brown and the filling is bubbly in the center, about 45 minutes. Read More

On this Independence Day, it occurs to me that my imagination probably spends way too much time wandering in the garden and kitchen at Monticello, the iconic home of founding father Thomas Jefferson. One has only to visit it once to understand why—or to comprehend the deep love for it that inspired him to write, “all my dreams end where I hope my days will end, at Monticello.”
But today, with other, more stirring, words from his pen in the air, it is probably inevitable that my thoughts should turn to that hill again, and in a funny way, thinking of Jefferson’s garden and table always brings me home.
Now, Monticello is a world apart from the small-town life of my childhood, but my mother and Jefferson have a lot in common—at least, when it comes to dinner.
All her life she has shared his passion for growing things and experimenting with new plants. (Who else in the deep South was growing kohlrabi in the sixties?) She has also shared his famous diet, which consisted mostly of freshly gathered vegetables, simply dressed.
Nothing illustrates that better than a defining element of my mother’s summer table: slim, immature green beans, cooked but dressed with vinaigrette and served at room temperature, which is the very same way Jefferson himself enjoyed them. James, Peter, Edy and Fanny (the slaves who governed Monticello’s kitchen) probably could not have counted the number of times they sent up that from the kitchen during the season.
Mama called her version “pickled beans,” and they came to our table mounded on a rectangular, cut glass relish dish, neatly aligned like chord wood and garnished with finely minced onions—as lovely to look at as they were to eat.
I just happen to have one of her cut glass relish dishes, and though the slim little haricots verts that filled it did not, sad to say, come from her garden, they still seemed just the thing for celebrating Independence Day.

The beans you want for this salad should be as young as possible, very thin and small—preferably no more than three inches long—such as true young French haricots verts. Once again, Mary Randolph captured the way they were cooked at Monticello:

French Beans.

Cut off the stalk end first, and then turn to the point and strip off the strings; if not quite fresh, have a bowl of spring water, with a little salt dissolved in it, standing before you, as the beans are cleansed and trimmed, throw them in; when all are done, put them on the fire in boiling water with some salt in it; when they have boiled fifteen or twenty minutes, take one out and taste it; as soon as they are tender, take them up, and throw them into a colander to drain. To send up the beans whole, when they are young, is much the best method, and their delicate flavor and color is much better preserved. When a little more grown, they must be cut across, in two, after stringing; and for common tables, they are split, and divided across; but those who are nice, do not use them at such a growth as to require splitting.

Most modern haricots verts will not take as long as Mrs. Randolph suggests here, and at any rate, she wanted her reader to watch the pot, not the clock. In my youth, good olive oil was hard to come by in the farming communities and small towns where we lived, so the oil was mostly peanut or some generic “salad” oil. Now that she can get it, she often dresses even warm vegetables with a good fruity olive oil.

Serves 4
1 pound thin, immature green beans
3 tablespoons minced mild onion, preferably Vidalia Sweet
Salt and whole black pepper in a peppermill
About 2 tablespoons cider vinegar
1 teaspoon sugar, optional
Extra virgin olive oil

1. Have ready a basin of cool water. Snap off the stem end of the beans, pulling off the strings (if there are any) as you go, then snap off the pointed tails and make sure that all the string has been removed (if it’s a stringless variety, don’t tail them—it’s not necessary). Drop them as they are trimmed into the water and let them soak for at least 15 minutes to freshen them. Prepare a basin of ice and water.

2. Put 4 quarts of water in a large, heavy-bottomed pot and bring it to a boil over medium-high heat. Throw in a small handful of salt.

3. Lift the beans from their soaking water and add them to the pot a handful at a time. Cover, let it come back to a boil, and remove the lid. Cook until al dente— still bright green and firm to the bite but no longer crunchy, about 4-to-6 minutes. True haricots verts may require a minute or so more. Drain and immediately immerse them in the ice water to arrest the cooking. Let them get cold and then drain well.

3. Put the beans in a bowl and strew 2 tablespoons of minced onion over them. Season with salt, a few grindings of pepper, and a couple of spoonfuls of vinegar. My mother often adds a teaspoon or so of sugar for a sweet-sour note. Toss well, taste, and correct the vinegar and seasonings—going easy; the flavor will intensify as they marinate. Cover and marinate for at least a thirty minutes or up to an hour.

4. When you are ready to serve the beans, drizzle them with olive oil—just enough to give them a nice gloss—and toss until evenly coated. Arrange on a shallow serving dish, sprinkle the top with the remaining spoonful of minced onion, and serve at once.

Now, that is how my mother does it. Nowadays I always reverse the oil and vinegar, adding the latter just before serving so that the beans retain their bright color, but admit that they taste better Mama’s way, even though the acid dulls them to army-fatigue olive. Read More

Tomato Salad a la Annabella Hill

A surer sign of summer than ants at a picnic is the annual reappearance of one of America’s most enduring food myths: that we believed tomatoes were poisonous until the beginning of the nineteenth century, and still thought them unsafe to eat raw for decades after that.

The myth is often accompanied by an equally popular tale of how some prominent American like Daniel Webster or Thomas Jefferson ate a raw tomato on the local courthouse steps to prove to his neighbors that it was not only safe, but good.

There have been many spin-offs of this myth, my personal favorite being a “factoid” on a televised history of hotdogs asserting in all seriousness that because tomatoes were believed to be poisonous, tomato ketchup was created as a medicinal tonic.

Never mind that our word ketchup (or catsup) is a culinary term, derived from a Southeast-Asian word for fish sauce, and has never been used in medicine. (Honestly: where do these people get this stuff?) By the time the earliest printed recipes for tomato ketchup began to appear (decades before that factoid claimed), everyone knew that tomatoes weren’t poisonous, and the condiment was already popular in American kitchens, and not, rest assured, as a tonic.

One reason such nonsense is so stubbornly perpetuated is in part because journalists and pop-culture historians tend to ignore the South. Even before the first cookbooks penned by Southerners made print, there were manuscript recipes for cooked tomatoes dating as early as 1770, the year the prominent Charleston matron Harriott Pinckney Horry probably recorded how “To Keep Tomatoes for Winter Use ” in her household notebook.

The title alone suggests that by the time Mrs. Horry put the recipe to paper, Carolinians had been routinely consuming cooked tomatoes for decades.

Printed American recipes for raw tomato salad go back at least as far as 1824, when Mary Randolph included “Gaspacha,” a thick soup-like Spanish salad of raw tomatoes, cucumbers, onions, and peppers, in The Virginia House-wife. One might argue that the recipe, which probably came to Mrs. Randolph by way of a sister who once lived in Cadiz, was an out of place curiosity were it not for the fact that gazpacho quickly became popular in Virginia, suggesting that people in the region were long accustomed to eating raw tomatoes.

Indeed, within a very few years, other Southern cookbook authors were treating tomato salad in a very off-hand way:

“To Dress Tomatoes Raw.

Take ripe tomatoes, that are large and fine, peel and slice them tolerably thick, put them in a deep dish, and season them highly with salt, pepper, and vinegar. This is a delicious breakfast dish, and is also a fine accompaniment to roast meats, for a dinner.”

“Tomato Salad.

Tomatoes may be eaten raw, cut up with salt, oil, vinegar and pepper, as you do cucumbers.”

— Sarah Rutledge, The Carolina Housewife, 1847.

By the beginning of the War Between the States, onion was a popular addition:

“Tomato Salad.—Scald and peel them; slice them thin, season with salt, pepper, sugar, and a little onion; add very little vinegar.”

— Annabella Hill, Mrs. Hill’s New Cook Book, 1867.

What brings this all to the fore is one perfectly ripe tomato from my mother’s garden. For the first time in many years, I was able to be with my father on Father’s Day. The tomato plants in mother’s garden were just beginning to bear, and she gave me one handsome specimen to bring home—just enough for a salad for two.

With all due respect to Mrs. Hill, I was not about to spoil that beautiful tomato with scalding water and sugar. Once cored and thinly sliced, it was easy to slip the peel off with the narrow blade of a peeling knife. Spread on a plate and dressed, as Mrs. Hill directed, with shaved Vidalia sweet onion, salt, pepper, and a few drops of sherry vinegar, I strayed only by using a scattering of freshly snipped basil instead of sugar.

Sharing the plate with more of my mother’s produce (early half-runner beans and sweet yellow squash) and a bit of pork tenderloin pan roasted with sage and onions, that salad carried me back to the big Sunday lunches of childhood, a poignant reminder of how much we took for granted back then—and how much we’ve lost. Read More

6 June 2011 Shrimp Paste

A traditional Shrimp Paste appears in my book Classical Southern Cooking

One of most anticipated moments in the gastronomical life of Charleston and Savannah is the return of the small but deeply flavorful brown shrimp to the briny creeks that lace the Lowcountry’s marshes. Simply poached in their shells and served with melted butter, cocktail sauce, or homemade garlic mayonnaise, or sautéed in butter and ladled over a bed of snowy hominy grits, they have no equal, even among the fattest and sweetest Adriatic prawns.

Another great classic of Lowcountry tea and cocktail tables is this simple pâté of pulverized shrimp and butter –

“Shrimp Paste

Run a quart of boiled and picked shrimp through the grinder. Then place in saucepan with salt, pepper, mace, and two heaping tablespoons of butter. Heat thoroughly, and put into molds. Pressing down hard with a spoon, and pouring melted butter over the top. Put in refrigerator, and when cold, slice and serve. An excellent hors d’oeuvre, or an addition to tomato salad.”

– Harriet Ross Colquitt, The Savannah Cook Book (1933)

It’s a very old conserve that long predates Mrs. Colquitt, known in old English and early American books as –

“POTTED SHRIMPS, OR PRAWNS.

Let the fish be quite freshly boiled, shell them quickly, and just before they are put into the mortar, chop them a little with a very sharp knife; pound them perfectly with a quantity of fresh butter, mace, and cayenne.

Shrimps (unshelled), 2 quarts; butter, 2 to 4 oz.; mace, 1 small saltspoonful; cayenne, 1/3 as much.

– Eliza Acton, Modern Cookery for Private Families (1845).

From the Lowcountry in the same era, we have Miss Rutledge’s rather sketchy version –

“To Pot Shrimps.

Pick the shrimps (after they are boiled) from the shells; beat them well in a mortar, and put as much melted butter to them as will make them of the proper consistence to be pressed compactly together; add pepper, salt, mace, and nutmeg to the taste; put the mixture into small pans, and pour melted butter over them about a quarter of an inch thick. If wanted for immediate use, grated bread may be added.”

Mrs. Colquitt’s tablespoon was a kitchen spoon that was larger than the standard measuring implement of our day. She’s calling for about the same amount of butter as Miss Acton. Her logic in reheating the paste is that it helped prolong its shelf life once potted, though refrigeration had made it an unnecessary caution by her day, and interestingly, the older recipes don’t mention it.

Regardless of its provenance, shrimp paste remains a staple throughout the Lowcountry, though today there’s not a single cook left in the region who would make it with a meat grinder, let alone mortar and pestle. Both methods have given way to the food processor. The old ways perhaps did yield a more interesting paste, but the machine makes such short work of it that the sacrifices in authenticity and texture seem well worth it.

All this came to mind because those little brown shrimp have arrived, and shrimp paste seemed just the thing for a recent late Sunday silver-and-linen reception. Here’s how I made it, from Classical Southern Cooking.

Shrimp Paste
Serves 6 as a first course, or 20 for cocktails or tea

1½ pounds cooked shrimp, peeled
¼ pound (1 stick) unsalted butter, softened to room temperature
2 tablespoons grated shallots or yellow onion
Salt and whole white pepper in a peppermill
1 blade mace, crushed to a powder, or whole nutmeg in a grater, optional
Ground cayenne pepper
Crisp toast points or Melba toasts

1. Fit the bowl of the processor with a steel blade and put in the shrimp. Cover and pulse until coarsely ground.
2. Add the butter, shallots, a large pinch of salt, and a dash each of cayenne, white pepper, and mace or nutmeg if liked. Process until the mixture forms a paste. Don’t over-process it to a mousse consistency: there should still be some texture. Taste and adjust the salt, pepper, cayenne, and mace. Pulse a few times to mix the seasonings.
3. Lightly butter a 3-cup metal mold, or two smaller molds, or a small loaf pan. Press the paste firmly into it, making sure there are no pockets of trapped air. Cover with a plate or plastic wrap and chill for several hours until firm. Alternatively, pack the paste into crocks, cover with melted clarified butter, and chill until needed.
4. To un-mold, stand the mold in a basin of hot water for 1 minute. Loosen the edges with a knife, and invert the mold over a serving plate—the paste should come out with a couple of firm taps on the top of the mold. Smooth any gaps with a spatula and let it stand until it’s soft enough to spread. If the paste was stored in crocks, serve it directly from the crock without un-molding it. Everyone knows the old adage that those who don’t know history are doomed to repeat it. In food history, the more likely adage is that those who don’t know history are doomed to think they’ve invented something that has been around for centuries.

Let’s face it, except possibly for that extremely silly restaurant fad for “deconstructed” food, there is very little about cooking that is really new, and most of the things that actually are new are built on an idea or a technique that has been around for a very long time—at least, anything that has legs and substance.

Those who know my first cookbook, Classical Southern Cooking, and subsequent work as a developer of historical recipes, presume that stepping into my kitchen is like time travel. They’re always shocked to find jars of marinara in my pantry. But while my work and my heart may be involved in the past, the rest of me lives right here in the present.

A solid grasp of food history is not a culinary straight jacket. In fact, it can be wonderfully liberating: the more one knows about the cooking of the past, the less one has to think in the present. Techniques and ideas flow organically from one’s subconscious without a lot of taxing the imagination to be clever.

For example, a knowledge of that wonderful old flambéed dessert, Cherries Jubilee, made it easy to parlay a half-pint of blueberries in the fruit bin of the refrigerator into a quick dessert on a warm spring night. It was nothing new, just a very old idea and technique logically applied to another round fruit that would roll easily in the pan.

I like to think that Annabella Hill, Mary Randolph, and Lettice Bryan would have enjoyed it, but can promise you this: they lived in the real world of their own time, with a solid understanding of their own culinary past. They wouldn’t have thought there was anything especially clever or inventive about it.

Blueberries with Grand Marnier
Part of the charm of Cherries Jubilee is the pyrotechnical show: it’s done tableside in a chafing dish and the fruit is ladled over the ice cream while it’s still flaming, but it tastes better when the alcohol is fully burned off, so I always let the flame die completely.
Serves 2

2-4 scoops vanilla ice cream
1½ tablespoons unsalted butter
1 cup blueberries, rinsed well and picked over for stems
1-2 tablespoons sugar
Ground cinnamon in a shaker
Whole black pepper in a mill
A generous splash (about 2 tablespoons) Grand Marnier

1. Have the all the ingredients ready and put the ice cream into serving bowls. Melt the butter over medium high heat in a 9-10 inch skillet or sauté pan. Add the blueberries and shake the pan to coat them with butter. Sprinkle with sugar to taste, a couple of light dashes of cinnamon, and a light dash of black pepper (about 1 light twist of the mill).

2. Sauté, shaking the pan constantly, until the berries begin to shed juice into the butter and the sugar is dissolved, about a minute. Pour in the Grand Marnier and standing well clear, ignite it. Continue to shake the pan, rolling the berries, until the flames go out. Turn off the heat, pour the berries over the ice cream, and serve at once. Read More

22 May 2011_History in the Hands of Clever Reporters

One of the vagaries of having published a cookbook that involves a famous historical figure is that one will eventually have to talk to reporters about that figure.

Now, having worked as a journalist myself, let me quickly say that I have every respect for those whose job it is to pave our glutted information highway. Our society is inordinately curious about celebrity, down to the most tediously boring detail of their lives, and someone, I suppose, has to satisfy that curiosity.

Witness the recently published private correspondence between Julia Child and her friend Avis DeVoto, which has been my bedtime reading over the last few weeks. At best, about a quarter of these letters are interesting to cooks and culinary historians, chronicling as they do Child’s growth as a cook and teacher and the development of her masterpiece, Mastering the Art of French Cooking. The rest of it is, even for historians, about as interesting as watching paint peel.

Is what Mrs. Child thought of Joe McCarthy and J. Edgar Hoover really important? Not really, no. But because she was famous, someone thinks it ought to be.

Well, regardless of that, the historian who compiled and edited these letters at the very least maintained a healthy respect not only for both these women’s privacy but also for the truth. Unhappily, not all journalists take that much care.

For many of them, being clever, it seems, is more important than being factual.

Recently, because of my work as recipe developer for Dining at Monticello, a collection of essays and recipes that chronicle the food culture at Thomas Jefferson’s beloved home, I spoke on the subject at a nearby public library.

The following day, the local paper published an on-line video about the event that was introduced by a young woman who reported that Jefferson was not only a founding father and author of the Declaration of Independence, he was “also a very good cook.”

Clearly she did not hear my lecture, and subscribed to the time-honored Southern theory that facts should never be allowed to interfere with a good line.

Now, Jefferson was a lot of things, but he was no cook. Those were, in fact, just about the first words out of my mouth that evening. Yes, he’s an almost iconic figure in American culinary history, right up there with Mrs. Child, but unlike that lady, it is not because he mastered the art of French cooking—or, for that matter, any other kind.

He didn’t even know how to cook in theory, and never so much as lifted a pan, turned a spit, or cracked an egg. Jefferson was a gentleman farmer, and men like that simply didn’t do such things back then. Oh, to be sure, there were male cooks, even in the kitchen at Monticello, but he wasn’t one of them.

What set Jefferson apart for us was not his active participation but his catholic curiosity. While he was not the only man in his position to care about the quality of his table, he was the only one who cared enough to find out how a thing was done, and to copy out that how for those whose job it was to actually do it.

Unfortunately, he knew so little of actual culinary practice that he would often get the method hopelessly wrong. Luckily, his cousin (and daughter’s sister-in-law), Mary Randolph had a knowledge of cookery that went well beyond theoretical. She made sense out of Jefferson’s culinary scribbles in her lovely cookbook, The Virginia House-wife, published just two years before Jefferson died.

Were it not for Mrs. Randolph, my job translating the recipes that survive in Jefferson’s hand would have been a challenge. One can only imagine the hilarity with which that lady would have met our intrepid reporter’s pronouncement.

Well, what else could I do but follow Mrs. Randolph’s lead, laugh it off, and head back to the kitchen, where I happened to have some fresh, locally grown shiitake mushrooms and a pint of premium 40 % milkfat cream from a local organic dairy.

While it was not the season for the common field mushrooms that Mrs. Randolph used, nor are shiitake found in Virginia, even among the horticultural curiosities at Monticello, I still looked to her exquisitely simple recipe for inspiration.

Stewed Mushrooms.

Gather grown mushrooms, but such as are young enough to have red gills; cut off the part of the stem which grew in the earth, wash them carefully and take the skin from the top; put them into a stew-pan with some salt, but no water, stew them till tender, and thicken them with a spoonful of butter mixed with one of brown flour; red wine may be added, but the flavour of the mushroom is too delicious to require aid from any thing.

It was the perfect foil for misunderstood history, but it wasn’t, unfortunately, the perfect recipe for wood mushrooms like shiitake. In keeping with the spirit of her cooking, Jefferson’s fondness for French style, and perhaps because I’ve been reading about Julia Child, I instead got out a sauté pan and made

Sautéed Shiitake Mushrooms with Cream
Serves 4

¾ pound Shiitake mushrooms
¼ cup minced shallot
2 tablespoons unsalted butter
1 tablespoon olive oil
Salt and whole black pepper in a peppermill
¼ cup heavy cream
4 thick slices buttered and toasted baguette

1. Clean the shiitake, cut off their tough stems and thickly slice them.
2. Put the shallot, butter, and olive oil in a sauté pan over medium heat and sauté, tossing often, until golden, about 5 minutes.
3. Raise the heat to medium high and add the shiitake, quickly tossing them so that they evenly absorb the butter. Like most mushrooms, they will immediately suck up the butter, but after they’re thoroughly heated, will release it once more into the pan. Sauté, tossing almost constantly, until they are wilted and coloring, about 4 minutes.
4. Splash in the cream and let it lightly thickened, about a minute more. Season liberally with salt and pepper, turn off the heat, and immediately pour them over the buttered toast. Read More

10 May 2011: Fava alla Randolph

One of the amusing things about our modern “foodie” culture is all the posturing about how much more worldly and smart today’s cooks are than those of the past.

Anyone who has ever attempted classical French cooking (or any other kind, for that matter) on an open hearth knows better. An open fire requires a level of wisdom and skill that today’s motor-driven cooks, dependent as they are on thermostatically controlled ranges, electric food processors, and high-speed hand blenders, simply don’t have.

What’s more, all the dishes and foodstuffs that so many of these so-called “foodies” think they’ve only recently discovered have been around for a long time, and I don’t mean the obvious, in their countries of origin: I mean right here in River City.

Just take a casual dip into the cookbook that is widely believed to be the first penned by a Southerner, The Virginia House-wife. Within the pages of this lovely book, published almost two hundred years ago by Thomas Jefferson’s cousin, Mary Randolph, you’ll find such wonders as raspberry and herb vinegars, gazpacho, polenta, Spanish Olla and Ropa Veija, seviche (she spelled it “caveach”), classic French cooking, authentic homemade egg pasta, and fava beans.

That last masqueraded under an archaic name, “Mazagan” beans, but they’re fava all right—

“Mazagan Beans.

This is the smallest and most delicate species of the Windsor bean. Gather them in the morning, when they are full-grown, but quite young, and do not shell them till you are going to dress them. Put them into boiling water, have a small bit of middling, (flitch,) of bacon, well boiled, take the skin off, cover it with bread crumbs, and toast it; lay this in the middle of the dish, drain all the water from the beans, put a little butter on them, and pour them round the bacon.”

Windsor bean is (or was) the common English name for fava. Lest you think she didn’t really know about these staples of Mediterranean gardens, she continues—

“When the large Windsor beans are used, it is best to put them into boiling water until the skins will slip off, and then make them into a puree as directed for turnips—they are very coarse when plainly dressed.”

There you are, a fava puree just like the one that was recently published in one of our trendy food magazines.

Mrs. Randolph’s recipe with “middling, (flitch,) of bacon,” (salt-cured side meat), has a lot in common with the Roman way with these beans, known outside the city as “alla romana” but within it as “alla guanciale,” salt-cured pork jowl.

All this comes to mind because there were lovely fresh fava in the produce bins at my neighborhood natural food store. They were so young and beautiful that the first handful were shelled, dipped in sea salt, and eaten raw, as Romans do when these wonders first come into season. For the rest, we were alas fresh out of salt-cured pork jowl, the country ham stash in the freezer was way past usefulness for anything but shoe sole repair, and there wasn’t a scrap of middling to be had without going out again.

Ah, but a perusal of the spice cabinet turned up a precious little tin of Virginia Willis’s pecan-wood smoked sea salt. The results were—

Fava (not quite) alla Romana
Or Middling-less Mazagan Beans
Serves 4

3 pounds of fresh unshelled Windsor (fava) beans
2 tablespoons unsalted butter
1 small shallot, trimmed, peeled, and minced
1 medium clove garlic, lightly crushed and peeled, but left whole
Pecan or hickory smoked sea salt, or kosher salt
Whole black pepper in a mill

1. Shell the beans and rinse under cold running water. Put the butter and shallot in a wide, lidded sauté pan or skillet over medium heat. Sauté, stirring occasionally, until the shallot is translucent and beginning to color, about 4 to 5 minutes.

2. Add the garlic and continue sautéing until it is beginning to color on the edges. Add the beans and season well with smoked salt (or plain salt) and pepper, both to taste. Add enough water to barely cover the beans, bring it to a boil, then cover and reduce the heat to low. Simmer gently until tender, between 6 and 15 minutes depending on the age and size of the beans.

3. If the liquid remaining in the pan is still thin, uncover, raise the heat, and quickly evaporate it to a thick sauce. Turn off the heat, shake the pan to evenly coat the beans with the sauce, and serve immediately. Read More

One of the best things about roasting a whole leg of lamb for Easter is that it usually affords a lot of lovely leftovers: sliced cold from the joint and eaten with herb mayonnaise or piquant barbecue sauce, either on a plate with potato salad and a salad of spring greens (or perhaps leftover cooked asparagus dressed with vinaigrette), or just tucked into a leftover yeast roll; diced and simmered in Scotch Broth (lamb-barley soup) made from the bones and scraps; or, perhaps my favorite, minced fine and baked under a blanket of mashed potatoes in a rich shepherd’s pie.

When it’s the latter that’s called for, I once again look no further than that under-appreciated culinary master from the nineteenth century, Mrs. Lettice Bryan, whose lovely individual shepherd’s pies can be found under –

Mutton Casserolles.

Take small scolloped pans, butter them well, and put over each a smooth paste of mashed potatoes, which have been highly seasoned with salt, pepper, butter, and sweet cream. Peel, slice and season some fine, ripe tomatoes; put a layer of them on the bottom of each pan, then put on a layer of cold boiled mutton, shred as fine as possible, and one of grated ham, sprinkle on some grated lemon, pepper, and nutmeg. Add a few spoonfuls of rich gravy, and as much wine; put a paste of potatoes over the tops, and bake them a delicate brown, in a brisk oven. When done, turn them out smoothly in a dish, spread over them a heated napkin, and send them to table immediately, with a boat of melted butter and wine.

How timeless Mrs. Bryan’s recipe remains to this day, reading like something from the latest issue of a trendy food magazine. There’s not much a modern cook could think up that this lady hadn’t already tried.

Though still popular in Kentucky, mutton is hard to come by for most of us, and “boiling” (their word for poaching the joint whole) fell out of favor as the iron range replaced the open hearth. But luckily this is equally as lovely with leftover roast lamb.

The recipe needs very little clarification for a modern cook. By grated lemon, she means the zest, and the “boat of melted butter and wine” is basically a buerre blanc.

Because American housewives in those days were rarely equipped with a wire whisk, butter was melted or “drawn” by adding it to a little water in a small pan. The cook held the pan over a simmering water bath and gently shook it (the best method) or stirred its contents until the butter was barely melted and still quite thick. Usually a little flour was added as insurance against “oiling” (their word for having it break).

At any rate, the casseroles are rich enough on their own: they certainly don’t need a butter sauce, but if you’re so inclined, bring a tablespoon of water and two of Madeira or dry sherry to a simmer over medium low heat, gradually whisk in 6 tablespoons of unsalted butter a teaspoon at a time, adding more before the previous bit is completely dissolved. It should be the consistency of thick heavy cream by the time all the butter is incorporated and melted. Season it with salt, to taste, and serve it immediately in a sauceboat that has been warmed by rinsing it with scalding hot water.

Here, with a little more detail, is Mrs. Bryan’s recipe for modern cooks. I’ve never added wine to the seasonings because the pan gravy from my lamb roast usually has a bit of Madeira in it. And because unmolding them is a bit tricky, I “send them to the table” in the individual gratin dishes in which they’ve baked.

Individual Mutton or Lamb Casseroles
Serves 6

1½ pounds leftover boiled or roast mutton or lamb
3 large, or 6 Roma-type ripe tomatoes
1 recipe Mashed Potatoes (recipe follows)
Whole black pepper in a peppermill
Whole nutmeg in a grater
The grated zest of 2 lemons
Salt
1½ cups leftover gravy (recipe follows)
1/3 pound cooked or raw country ham or prosciutto, roughly chopped

1. Preheat the oven to 350° F., and put on a teakettle of water to boil. If using roast lamb, chop it by hand with a knife or in the food processor, pulsing the machine to keep from completely pulverizing it.

2. Blanch, peel, and core the tomatoes. Cut them crosswise into 8 to 10 even slices. Seed and drain them in a colander set over the sink. Lightly butter 4 large ramekins or individual gratin dishes and line them with half the mashed potatoes.

3. Pat the tomatoes dry and put a layer of them over the mashed potatoes, about 2 slices per dish. Divide the meat evenly between each and season with a few grindings of pepper, a grating of nutmeg to taste, and the lemon zest. If the ham isn’t very salty, add a little salt. Top with the gravy and then the remaining mashed potatoes, smoothing them with the flat of a knife or spatula.

4. Bake until nicely browned and heated through, about half an hour.

For the mashed potatoes, as Mrs. Bryan would have made them:

Mashed Potatoes.

In the spring, when the potatoes are old and strong, they are much nicer mashed than when served whole, though mashed potatoes are fine at any season. Boil them till they are very tender; if old, in a good quantity of water, but if young, in barely enough to cook them tender. Peel them, mash them fine, press them through a sieve, to get out all the lumps, season the pulp with salt, pepper and butter, moistening it with sweet cream or milk; stir it with a spoon till the seasonings are well intermingled with the mass, and serve it warm, making it smooth in the dish. They are nice with any kind of meat, particularly poultry.

In case you need a bit more detail, my translation of the standard method for a modern kitchen, From Classical Southern Cooking, is:

Mashed Potatoes
Serves 6

2½ pounds mature potatoes of a uniform size
6 tablespoons unsalted butter
About ½ cup cream or milk
Salt and whole black pepper in a mill

1. Scrub the potatoes under cold, running water, and put them in a large pot. Add enough water to cover by 1 inch. Remove the potatoes, cover, and bring almost to a boil over medium high heat. Add the potatoes, bring to a full, rolling boil, reduce the heat to medium (a steady bubble but not a hard boil) and simmer until tender, from 20 to 30 minutes. Drain and let sit in a warm place for about 5 minutes, then quickly peel them.

2. Force the hot potatoes through a ricer back into the pot in which they were cooked. Over low heat, gradually beat in the butter, then the cream, and a healthy pinch of salt.

3. Stir until they are smooth and the liquid is incorporated. If they appear to be too dry, add a spoonful or so more cream or milk, but don’t overdo it. Taste and adjust the seasoning. Mound them in a warmed serving bowl, dust the top with a little black pepper, if liked, and serve at once. Read More

12 April 2011: Asparagus Soup

“Asparagus,” wrote Lettice Bryan with her singular gift for understatement, “is a nice vegetable, and requires equally as much nicety in preparing it.”

Those words, from her landmark 1839 cookbook, The Kentucky Housewife, were penned in the days before our global garden, when winter’s table was dominated by cabbages and dried beans. One of the first edible sprouts to nose its way through the thawing earth after the long, cold winter, asparagus was the very essence of spring, available for only a few precious weeks of the season.

It would never have occurred to Mrs. Bryan to explain that, or to caution that asparagus is only “nice” when it has just been cut from a garden that is merely minutes away from the pot. There was no need to warn against spears that had been shipped across several continents or preach that only locally grown, seasonal asparagus was worth having.

She offered no advice, as most authors do today, for keeping it fresh until it’s used, but simply directed to “Gather them when fully grown but very tender, taking care to have them as near the same size as possible, that they may all get done at the same time” and went right into preparing them for the pot. She also provided just three perfect recipes, knowing that, in this case, discretion was the better part of valor.

Of the three, the loveliest and most sensitive—indeed one of the loveliest recipes in print, then or now, was—

Asparagus Soup.

Your asparagus must be young and tender; scrape and wash it neatly, and let it lie for a time in cold water; cut small some of the green tops, and put them also in cold water. Make a broth in the usual manner, of a few pounds of fresh veal or poultry, and a small piece of ham. Cut the stalks of the asparagus into pieces not more than an inch long, and boil them in the broth till tender, seasoning it with salt, pepper, and butter. Mash to a pulp enough of the asparagus to thicken the soup, and let the other remain in pieces. Stir in a little rich sweet cream; just let it come to a boil, and serve it up with toasted bread cut in dice, dispersing over it some sprigs of the green tops.

Yes, today we can have “fresh” asparagus any time we want, but to have it just minutes from the garden, prepared by the hands of such a cook, is unfortunately rare even in its season.

In translating the recipe for Classical Southern Cooking, I did absolutely nothing but standardize the format, fill in directions that she took for granted, and set proportions for six servings. Everything else is as Mrs. Bryan intended it, right down to the nouvelle-cuisine-sounding raw tip garnish. All it requires is the freshest asparagus you can find.

Asparagus Soup

Serves 6
1 quart of Chicken Broth or Meat Broth made with veal bones (preferably homemade)
2 ounces country ham in one piece
1½ pounds young asparagus
1 tablespoon butter
Salt and whole black pepper in a peppermill
1 cup heavy cream at room temperature
1 cup Buttered Croutons (Recipe follows)

1. Bring the broth and ham to a boil in a large pot over medium heat. Meanwhile, peel the asparagus and drop it briefly into a basin of cold water. Let it soak for half an hour.

2. When the broth begins to boil, take up the asparagus, cut off the pointed tips, and cut the stems crosswise into one-inch long pieces. Roughly chop a dozen or so of the tips and set them aside in a bowl of cold water to cover.

3. Drop the remaining asparagus and the butter into the boiling broth. Let it return to a boil, then cover and lower the heat. Cook at a good simmer until the asparagus is tender, about 5—and no more than 10—minutes. Season it to taste with the salt and pepper.

4. With a slotted spoon, take out about a cup and a half of the greenest stems and tips and put them to the side in a covered bowl. Puree the remainder with the broth by forcing them through a sieve as Mrs. Bryan originally directed, or through a food mill. If you are not that energetic, a stick blender or food processor does this job nearly as well.

5. Return the soup to the pot and heat it through over medium heat. Stir in the reserved cooked asparagus and cream. Simmer until just heated through, stirring well, and turn off the heat.

6. Ladle the soup into individual heated soup plate and garnish with croutons and a sprinkling of the chopped raw tips.

Buttered Croutons

Cut ½-inch thick slices of good, day-old bread (preferably homemade) into small, bite-sized cubes. For every cup of cubed bread, allow 2 tablespoons of butter. Melt the butter over a medium heat in a heavy skillet that will comfortably hold all the bread. Add the bread cubes and quickly toss them to until they are coated. Sauté, tossing frequently, until they are golden brown and crisp.

Another way requiring less attention: preheat the oven to 300° F. Put the butter in a shallow baking pan that will hold all the bread cubes in one layer, and melt it in the oven. Add the bread and toss until it is well coated. Return the pan to the oven and bake, stirring from time to time, until they are lightly browned and crisp, about half an hour. Read More

28 March 2011: Glazed Spring Turnips

Among the best offerings of spring’s garden are the tender new roots that flourish in the slowly warming earth—the slim young carrots, bright beets and radishes, and sweet baby turnips. Rarely found in conventional markets, these delicacies are what make growing one’s own produce, or at the very least, finding the nearest Farmer’s Market, worthwhile.

Spring turnips in particular have a sweetness and delicacy that all too soon gives way to more robust flavors as the vegetables grow large and fat in summer’s lusty heat. To preserve their delicacy and bring out their best, I rarely look any further than this lovely two-hundred-year-old recipe from one of the South’s earliest (and still best) cookbooks:

Ragout of Turnips.

Peel as many small turnips as will fill a dish; put them into a stew pan with some butter and a little sugar, set them over a hot stove, shake them about, and turn them till they are a good brown; pour in half a pint of rich high seasoned gravy, stew the turnips till tender, and serve them with the gravy poured over them.”

Mrs. Randolph’s ragout is actually a classic French recipe for glazed turnips, one that she almost certainly learned from the French-trained cooks at Monticello. Jefferson’s great granddaughter, Martha Jefferson Trist Burke recalled having had the dish there, but unhappily her recollections were dim at best and her attempt at a recipe was, to put it bluntly, completely inept. Fortunately, her great-grandfather’s cookbook-writing cousin was paying better attention, because her rendition is lucid and absolutely right.

At Monticello, this would have been prepared (as Mrs. Randolph suggests) on the stew stove in the state-of-the-art French kitchen that Jefferson added to the south wing dependencies in 1809. Here, for modern cooks, is the same recipe with a little more illuminating detail.

Ragout of Turnips (Navets Glacés, or Glazed Turnips)
Serves 4

2 pounds very small young turnips of the same size
2-3 tablespoons unsalted butter
1 tablespoon sugar
1 cup rich, well seasoned veal or beef broth

Wash, peel, and trim the turnips to uniform rounds or ovals. Over medium heat, melt the butter in a sauté pan that will comfortably hold the turnips in one layer.

Add the turnips and raise the heat to medium high. Shake the pan until they are evenly coated with butter and then sprinkle the sugar over them. Sauté, shaking the pan to keep them rolling, until they are uniformly golden brown, about 4-to-5 minutes.

Add the broth, bring it to a boil, and then cover and reduce the heat to medium low. Simmer, frequently but gently shaking the pan, until the turnips are tender, about 10-15 minutes.

What Mrs. Randolph doesn’t tell us is that the “gravy” should be reduced to a glaze. If it isn’t, uncover and briefly raise the heat and cook until the liquid is almost evaporated, again gently but almost continuously shaking the pan. She also doesn’t mention what I usually do—swirl in a pat of fresh butter at the end, which is in keeping with classic technique.

Pour the turnips into a warm serving bowl and serve immediately. Read More

Words on the Past

When it came time to write the inaugural essay for this page, the thought that kept swimming to the surface was a theme from an essay I wrote last year: with thousands of “blogs” crowding cyberspace and literally millions of words floating around on the Internet, does the world really need yet another one?
Probably not; almost certainly not.
Most blogs (horrid word, that) are just silly, self-absorbed, attention-getting streams of consciousness that begin and end with the author’s ego. They have about as much substance as a cozy Hallmark moment.
Do I really want to add more of that to the world just to get attention?
But then it occurred to me: fool, you just started your own web site. Your name is has been dot-commed. The whole purpose is to get attention, and if you didn’t want to do that, you’d never have gone to this much trouble. What’s all this demure posturing about?
The ugly truth about writers is, we can’t stop ourselves. Just like painting, composing, sculpting—writing is a compulsion we can’t help. We’d do it even if no one read it, even if we were dogged by critics who said our words were no good.
There are countless novels tucked away in boxes under the author’s bed, novels that no one else has—or ever will—see.
But just because there’s a compulsion to put words on the page, it does not follow that those words have to be vacuous. If this turns into little more than a lot of navel-gazing streams of time-wasting, meaningless fluff, it’s no one’s fault but my own.
The contributions here may not be regular; but I do promise not waste my and your time just to keep myself in front of you.
Having said all that, from here on, this is what you’ll find here: nothing new.
I have spent most of my life looking backwards into history, and what really interests me in the kitchen is less of where we are going than where we have been.
Most food professionals nowadays spend too little time thinking about that past, and it shows. Cooking is no different from anything else: without a firm understanding of where we’ve come from, the cooking, no matter how clever, will have no roots, and without those, like spring lettuce pinched from its bed, it soon withers and is forgotten.
This page looks back to the kitchens of our past. They weren’t perfect, but they still define our kitchens present and future, whether we like it or not.
